  • 200 grams rice noodles
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 cups vegetable broth
  • 2 tablespoons lime juice
  • fresh herbs (basil, cilantro) for garnish

Instructions

  1. Cook the rice noodles according to package instructions and set aside.
  2. In a pot, combine coconut milk, curry paste, soy sauce, and vegetable broth. Bring to a simmer.
