Coconut Crusted French Toast

  • 4 slices brioche bread
  • 2 large eggs
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened shredded coconut
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil

Instructions

  1. In a bowl, whisk together eggs, coconut milk, vanilla extract, sugar, and salt.
  2. Dip each slice of brioche bread in the egg mixture, coating completely.
  3. Spread shredded coconut on a plate and press each side of the dipped bread into the coconut to coat.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Add the coconut-crusted bread slices and cook until golden brown, about 3-4 minutes per side.
  6. Remove from skillet and serve warm with syrup or fruit.
