  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 ounces turkey bacon, chopped
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 8 ounces mushrooms, sliced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and sauté until crispy.
  2. Remove the bacon, leaving the drippings. Add beef to the pot and brown on all sides.
  3. Add onions and carrots, cooking until vegetables are softened.
  4. Stir in garlic, cooking for an additional minute.
  5. Add wine, beef broth, tomato paste, thyme, and bay leaf. Bring to a boil, then reduce to a simmer.
  6. Cover and cook for 2-3 hours, until beef is tender.
  7. In the last 30 minutes, add mushrooms to the pot.
  8. Season with salt and pepper before serving.

Notes

  • For extra flavor, marinate beef in wine overnight.
  • Serve with crusty bread or mashed potatoes.
  • This dish tastes even better the next day.
