- 2 pounds beef chuck, cut into 1-inch pieces
- 4 ounces turkey bacon, chopped
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
- 8 ounces mushrooms, sliced
- In a large pot, heat olive oil over medium heat. Add turkey bacon and sauté until crispy.
- Remove the bacon, leaving the drippings. Add beef to the pot and brown on all sides.
- Add onions and carrots, cooking until vegetables are softened.
- Stir in garlic, cooking for an additional minute.
- Add wine, beef broth, tomato paste, thyme, and bay leaf. Bring to a boil, then reduce to a simmer.
- Cover and cook for 2-3 hours, until beef is tender.
- In the last 30 minutes, add mushrooms to the pot.
- Season with salt and pepper before serving.
