Ingredients
Scale
1 cup almond flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
4 large eggs
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
1 cup heavy cream
2 tablespoons powdered sugar (optional)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine almond flour, cocoa powder, baking soda, and salt.
In another bowl, whisk eggs until fluffy, then mix in honey and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Spread the batter evenly on the prepared baking sheet and bake for 15-20 minutes until set.
Once baked, loosen the edges and roll the cake while still warm in the parchment paper. Let it cool completely.
In a separate bowl, beat the heavy cream until soft peaks form, then add powdered sugar if desired.
Unroll the cooled cake, spread the whipped cream evenly, and roll it back up carefully.
Slice and serve the chocolate Swiss roll cake.
