Chocolate Espresso Banana Bread

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tablespoon instant espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas with a fork until smooth.
  3. Mix in the melted butter, then add the sugar, egg, and vanilla.
  4. Sprinkle the baking soda and salt over the mixture, then mix in the flour, cocoa powder, and espresso powder.
  5. Pour the batter into a greased 9×5 inch loaf pan.
  6. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let it cool in the pan for a few minutes before transferring to a wire rack.
