Chimichurri Steak

  • 2 pounds flank steak
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a bowl, combine parsley, cilantro, red wine vinegar, olive oil, garlic, red pepper flakes, salt, and pepper.
  2. Place the flank steak in a resealable bag and pour the chimichurri marinade over it.
  3. Seal the bag and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat the grill to medium-high heat.
  5. Remove the steak from the marinade, letting any excess drip off.
  6. Grill the steak for about 4-6 minutes per side for medium-rare, or longer if desired.
  7. Allow it to rest for 5 minutes before slicing.
  8. Serve with remaining chimichurri sauce on top.

Notes

  • For a spicier kick, increase the red pepper flakes.
  • Chimichurri can be made ahead of time and stored in the refrigerator.
