- 2 pounds flank steak
- 1 cup fresh parsley, chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup red wine vinegar
- 1/2 cup extra virgin olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a bowl, combine parsley, cilantro, red wine vinegar, olive oil, garlic, red pepper flakes, salt, and pepper.
- Place the flank steak in a resealable bag and pour the chimichurri marinade over it.
- Seal the bag and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove the steak from the marinade, letting any excess drip off.
- Grill the steak for about 4-6 minutes per side for medium-rare, or longer if desired.
- Allow it to rest for 5 minutes before slicing.
- Serve with remaining chimichurri sauce on top.
Notes
- For a spicier kick, increase the red pepper flakes.
- Chimichurri can be made ahead of time and stored in the refrigerator.
