Chicken Pot Pie Soup

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 cup chopped onions
  • 2 cups diced carrots
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 tablespoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup heavy cream
  • 1 teaspoon Worcestershire sauce

Instructions

  1. In a large pot, heat olive oil over medium heat and add the chicken thighs.
  2. Cook until browned and cooked through, then remove and shred the chicken.
  3. Add onions, carrots, and potatoes to the pot; sauté until softened.
  4. Stir in the peas, chicken broth, thyme, salt, and pepper.
  5. Bring to a simmer, then add heavy cream and Worcestershire sauce.
  6. Return the shredded chicken to the pot and stir well. Simmer for 5 more minutes.
