  • 4 slices turkey bacon, chopped
  • 1 cup onion, diced
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion, carrots, and celery. Cook until vegetables are tender.
  3. Stir in garlic and cook for 1 more minute.
  4. Add chicken broth and bring to a boil.
  5. In a bowl, mix flour with a bit of the broth to create a slurry, then add it to the pot.
