Ingredients

  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 3 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Sauté onion, carrots, and celery in bacon fat until softened.
  3. Add chicken broth and bring to a boil.
  4. Stir in cooked chicken, peas, and cream.
  5. Season with thyme, salt, and pepper. Simmer for 10 minutes.
  6. Top with crumbled bacon before serving.

Notes

  • For a thicker soup, add cornstarch mixed with water.
  • Feel free to add more vegetables like corn or green beans.
