Caldo de Pollo

Caldo de Pollo is a traditional Mexican chicken soup that is both hearty and soothing. This recipe provides a simple way to create this comforting dish at home with fresh ingredients and a delicious broth.

Ingredients

  • 4 cups chicken broth
  • 2 chicken breasts, boneless and skinless
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 potato, diced
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime, juiced
  • 1/2 cup cilantro, chopped

Instructions

  1. In a large pot, combine the chicken broth, chicken breasts, onion, carrots, celery, garlic, and potato.
  2. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Add cumin, salt, black pepper, lime juice, and cilantro. Stir well and simmer for an additional 10 minutes.
  5. Serve hot, garnished with additional cilantro if desired.

Notes

  • For extra flavor, you can add chili peppers or corn.
