Buttery Pistachio Gooey Butter Cake Recipe

A deliciously rich and gooey butter cake infused with pistachio flavor.

  • 1 box yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1 cup pistachio nuts, finely chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cake mix, melted butter, and 1 egg until well mixed.
  3. Spread the mixture into the bottom of a greased baking dish.
  4. In another bowl, beat together the cream cheese, eggs, vanilla extract, and powdered sugar until smooth.
  5. Pour the cream cheese mixture over the cake mix layer.
  6. Sprinkle finely chopped pistachios on top.
  7. Bake for 40-45 minutes until the center is set but still gooey.
  8. Allow to cool before serving.

Notes

  • For an extra touch, top with whipped cream or serve with vanilla ice cream.
