Ingredients

  • 1 pound butternut squash
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 3 cups cooked pasta

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the butternut squash, then toss with olive oil, salt, and pepper.
  3. Spread onto a baking sheet and roast for 25-30 minutes until tender.
  4. In a skillet, sauté the onion and garlic until soft.
  5. Blend the roasted squash with sautéed onions, garlic, broth, and nutmeg until smooth.
  6. Stir in the heavy cream and cooked pasta.
