  • 2 cups Brussels sprouts, halved
  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the Brussels sprouts, butternut squash, olive oil, salt, black pepper, and red pepper flakes. Toss until well coated.
  3. Spread the vegetable mixture on a baking sheet and roast for 20-25 minutes, or until tender.
