- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 cups ricotta cheese
- 1/4 cup powdered sugar
- 1 teaspoon lemon zest
- 1/4 cup butter, for frying
- In a bowl, whisk together the flour, eggs, milk, sugar, and salt until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour a small amount of batter into the skillet, swirling to coat the bottom.
- Cook until the edges are lightly golden, then flip and cook for another minute.
- Remove and let cool. Repeat with remaining batter.
- In a separate bowl, mix ricotta, powdered sugar, and lemon zest until well combined.
- Spoon the ricotta mixture onto the center of each crepe and fold over to enclose.
- Return to the skillet and cook until warmed through on both sides.
