  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 cups ricotta cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1/4 cup butter, for frying

Instructions

  1. In a bowl, whisk together the flour, eggs, milk, sugar, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and lightly grease with butter.
  3. Pour a small amount of batter into the skillet, swirling to coat the bottom.
  4. Cook until the edges are lightly golden, then flip and cook for another minute.
  5. Remove and let cool. Repeat with remaining batter.
  6. In a separate bowl, mix ricotta, powdered sugar, and lemon zest until well combined.
  7. Spoon the ricotta mixture onto the center of each crepe and fold over to enclose.
  8. Return to the skillet and cook until warmed through on both sides.
  9. Serve with fruit or syrup if desired.

Notes

  • For a sweeter filling, add more powdered sugar to the ricotta mixture.
  • Store any leftovers in the refrigerator.
