- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup heavy cream
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup shredded cheddar cheese
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add crushed tomatoes, vegetable broth, basil, and oregano. Bring to a simmer and cook for 20 minutes.
- Stir in heavy cream and season with salt and pepper to taste.
- For the dumplings, in a bowl, mix flour, baking powder, and salt. Stir in cheese.
- Add milk until a dough forms, then drop spoonfuls into the simmering soup.
- Cover and cook for 15 minutes, or until dumplings are cooked through.
