  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup heavy cream
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add crushed tomatoes, vegetable broth, basil, and oregano. Bring to a simmer and cook for 20 minutes.
  3. Stir in heavy cream and season with salt and pepper to taste.
  4. For the dumplings, in a bowl, mix flour, baking powder, and salt. Stir in cheese.
  5. Add milk until a dough forms, then drop spoonfuls into the simmering soup.
  6. Cover and cook for 15 minutes, or until dumplings are cooked through.
