- 2 pounds beef shanks
- 1 cup onion, chopped
- 1 cup carrot, chopped
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 1 cup dry white wine
- 2 cups beef broth
- 1 can (14 oz) diced tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon bay leaf
- Salt to taste
- Black pepper to taste
- Preheat the oven to 325°F (160°C).
- In a large Dutch oven, heat the olive oil over medium heat.
- Season the beef shanks with salt and black pepper, then brown them on all sides.
- Add the onions, carrots, celery, and garlic, sautéing until softened.
- Pour in the white wine and let it simmer for a few minutes to reduce.
- Add the beef broth, tomatoes, thyme, and bay leaf, stirring to combine.
- Bring to a simmer, then cover and transfer to the oven.
- Cook for about 2 hours, or until the meat is tender and falling off the bone.
