Beef Osso Bucco

  • 2 pounds beef shanks
  • 1 cup onion, chopped
  • 1 cup carrot, chopped
  • 1 cup celery, chopped
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 2 cups beef broth
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, heat the olive oil over medium heat.
  3. Season the beef shanks with salt and black pepper, then brown them on all sides.
  4. Add the onions, carrots, celery, and garlic, sautéing until softened.
  5. Pour in the white wine and let it simmer for a few minutes to reduce.
  6. Add the beef broth, tomatoes, thyme, and bay leaf, stirring to combine.
  7. Bring to a simmer, then cover and transfer to the oven.
  8. Cook for about 2 hours, or until the meat is tender and falling off the bone.
