Balsamic Flank Steak with Zucchini and Whipped Feta

In this easy recipe, tender flank steak is marinated in balsamic vinegar, grilled to perfection, and paired with sautéed zucchini and creamy whipped feta.

  • 1 pound flank steak
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 medium zucchinis, sliced
  • 1 cup feta cheese
  • 1/4 cup cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, garlic, salt, and pepper. Add flank steak and marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Remove steak from marinade and grill for about 6-7 minutes on each side or until desired doneness.
  3. While steak is grilling, heat a skillet over medium heat and sauté zucchini for about 5 minutes until tender.
  4. In a blender, combine feta cheese, cream, and parsley, and blend until smooth and creamy.
  5. Once steak is done, let it rest for 5 minutes before slicing against the grain. Serve with sautéed zucchini and whipped feta.

Notes

  • This dish pairs well with a light salad or grilled vegetables.
  • Leftover steak can be sliced thinly for sandwiches or salads.
