- 1 pound flank steak
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 medium zucchinis, sliced
- 1 cup feta cheese
- 1/4 cup cream
- 2 tablespoons fresh parsley, chopped
- In a bowl, whisk together balsamic vinegar, olive oil, garlic, salt, and pepper. Add flank steak and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Remove steak from marinade and grill for about 6-7 minutes on each side or until desired doneness.
- While steak is grilling, heat a skillet over medium heat and sauté zucchini for about 5 minutes until tender.
- In a blender, combine feta cheese, cream, and parsley, and blend until smooth and creamy.
- Once steak is done, let it rest for 5 minutes before slicing against the grain. Serve with sautéed zucchini and whipped feta.
