Baked Feta Potatoes with Lemon

  • 2 pounds baby potatoes
  • 1 block feta cheese
  • 3 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes and cut them in half.
  3. Toss the potatoes with olive oil, lemon zest, lemon juice, garlic, oregano, salt, and pepper.
  4. Place the potatoes in a baking dish and add the block of feta cheese on top.
  5. Bake for 30-40 minutes or until the potatoes are tender and the feta is golden.
