  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 2 cups potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1 cup parsnips, sliced
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides.
  2. Add the onions and garlic and sauté until softened.
  3. Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  4. Pour in the beef broth, and bring to a boil.
  5. Add the potatoes, carrots, and parsnips. Reduce heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
