- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 4 cups beef broth
- 2 cups potatoes, peeled and diced
- 1 cup carrots, sliced
- 1 cup parsnips, sliced
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Black pepper to taste
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides.
- Add the onions and garlic and sauté until softened.
- Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Pour in the beef broth, and bring to a boil.
- Add the potatoes, carrots, and parsnips. Reduce heat to low and simmer for 1.5 to 2 hours, or until the beef is tender.
