  • 34 slices galangal or ginger
  • 12 Thai chilies, smashed
  • 200 grams mushrooms, sliced
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 teaspoons sugar
  • fresh cilantro for garnish

Instructions

  1. In a pot, bring the chicken broth to a simmer.
  2. Add the lemongrass, kaffir lime leaves, galangal, and chilies, and simmer for about 10 minutes.
  3. Add the sliced chicken and mushrooms; cook until the chicken is fully cooked.
  4. Stir in the coconut milk, fish sauce, lime juice, and sugar. Cook for a few more minutes.
  5. Serve hot, garnished with fresh cilantro.
