  • 8 cups chicken broth
  • 4 ounces rice noodles
  • 2 cups bok choy
  • 1 cup sliced mushrooms
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger
  • 1 teaspoon garlic
  • 2 green onions, chopped

Instructions

  1. In a large pot, bring the chicken broth to a simmer.
  2. Add the chicken and cook until no longer pink.
  3. Remove the chicken, shred it, and return it to the pot.
  4. Add the rice noodles and cook until tender.
  5. Stir in the bok choy, mushrooms, soy sauce, ginger, and garlic.
  6. Cook for an additional 5 minutes.
