Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter; press mixture into the bottom of a springform pan.
  3. In another bowl, beat cream cheese until smooth; add sugar and vanilla extract, then mix in eggs one at a time.
  4. Fold in sliced apples and lemon juice; pour the mixture over the crust.
  5. In a separate bowl, mix brown sugar, oats, flour, cinnamon, and pecans; sprinkle over the cheesecake mixture.
  6. Bake for 60-70 minutes, until set; cool and refrigerate for at least 4 hours before serving.
