  • 1 tablespoon vegetable oil
  • 2 eggs
  • 1 cup bean sprouts
  • 1/2 cup scallions, chopped
  • 1/4 cup peanuts, crushed
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat the broiler.
  2. Cook the rice noodles according to package instructions.
  3. In a skillet, heat the oil over medium heat and scramble the eggs.
  4. Add cooked noodles, bean sprouts, and scallions to the skillet.
