  • 1/2 cup rice
  • 1 egg

  • 1 teaspoon onion powder
  • 2 teaspoons salt

  • 8 cups beef broth
  • 1 can diced tomatoes
  • 2 carrots, chopped
  • 1 zucchini, chopped
  • 1 onion, chopped

Instructions

  1. In a bowl, mix ground beef, rice, egg, garlic powder, onion powder, salt, and pepper.
  2. Form into meatballs.
  3. In a large pot, bring beef broth to a boil.
  4. Add meatballs carefully and let them cook for about 15 minutes.
  5. Add diced tomatoes, carrots, zucchini, and onion.
  6. Simmer for an additional 20 minutes.
